Gluten-Free Miracle Flour

Gluten-free baking has always been my nemesis.
Normally, I use recipes as a guideline and then add my own twist to it,
but not when baking gluten-free.
I follow it line for line...
which is really difficult for me.
I've had so many baking disasters with gluten-free treats, even when I follow the directions! 
It's temperamental.
But those days may be over!
Thanks to the fabulous Bob's Red Mill products.

Again, I'm sooooo fortunate to live close to the baking and grain mecca that is Bob's Red Mill. 
I'm not sure how other people get their questions answered, 
or pick up the BEST baking supplies in the world! 
(Okay, I'm sure they just email someone...)
When I have a question, especially with gluten-free, 
I just go see one of the knowledgable employees at The Mill. 
Seriously, they're amazing! 
Bob employs the best people!

because this flour is MAGIC!!
No, really...it really is a miracle.
I've made a lot of gluten-free treats, 
using combinations of flours and other so-called 1-to-1 baking flours...
Nothing compares to this! 
A-MAZ-ING!
Just look at these beautiful cookies!
Gluten-free little beauties.
Crispy edges, chewy center...perfection!
I see more beautiful gluten-free choices in my future and maybe yours too. :)

GF Vegan Dark Chocolate Chunk Cookies

It has always been my goal to make treats so that everyone can enjoy something delicious.
I first tackled making treats that were vegan, then tried my hand at gluten-free.
Both successful.
But what about those that needed treats that were both?!
There was no way that I could forget about them.
Especially when I can picture their happy, smiling faces chowing down on a cookie.
I LOVE it when people tear right into the cookie boxes and eat one right away.
Best thing to witness for a baker like me.
These cookies are the best of both worlds...vegan and gluten free.

Gluten Free and Vegan Oatmeal Chocolate Chip Cookies
Makes 22-24

Ingredients:
1/2 cup vegan butter, room temperature (8 tablespoons or 1 stick)

½ cup coconut oil
2/3 cup light brown sugar, packed
1/2 cup granulated sugar
1 1/2 teaspoon vanilla
1 egg equivalent of Flax Meal (I used Bob’s Red Mill brand)
1 cup gluten free all-purpose flour (I used Bob’s Red Mill brand)
1/2 teaspoon xantham gum (if your GF all-purpose flour does not already contain it)
2 cups gluten free whole grain oats (I used Bob’s Red Mill brand)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup dark chocolate chopped into chunks (Dairy-free chocolate)
  1. Pre-heat oven to 375 degrees F. Grease or line a baking sheet with parchment paper. 
  2. Add the vegan butter, coconut oil, brown sugar and granulated sugar to a stand mixer fitted with a paddle attachment and mix until combined. Add the flax meal and vanilla and mix until combined.
  3. In a medium bowl, stir together the gluten free all-purpose flour, xantham gum (if needed), gluten free oats, baking soda, baking powder and salt. Pour the dry ingredients into the butter mixture and beat on medium until combined. Stir in the dark chocolate chunks.
  4. Spoon onto the prepared cookie sheet in rounded tablespoons an inch apart. Bake 13-15 minutes, or until the bottoms of the cookies have browned and the cookies have set.
  5. Allow to cool for a few minutes on the cookie sheet, and then transfer to a wire rack to cool completely.

Even those without a gluten allergy or vegan will love these cookies.
Trust me, I only like things that are delicious and I definitely work to make my treats that way.

Vegan? Gluten-Free? Delicious!?!

Yes, yes, and YES!!
Who am I?
Seriously?
Wait...Don't leave! 
It's still me, Lori...no really!
It's me! See!!
I'm just trying something a little different today.
No fluffy, wheat-filled flour...
No pats of butter, melted into a creamy substance and poured into batter.
Today it's about making something just as delicious (maybe more),
and something that EVERYONE can eat and enjoy!
In fact, I made these as part of my Valentine's Day Bake Sale
and they sold out before school even started that day! 
People just couldn't get enough of these tasty,
slightly sweet, protein-filled bites.
Heck!  They're a little like what Cavemen must have eaten!
Well, if Cavemen had Peas and Thank You, Bob's Red Mill and chocolate. :0)
It's a winning combination.
A much better combination then what I normally think of when I think of Cavemen...
This is generally what pops into my mind.
Yes, it's entertaining, but these are cookies.
Plus, you can still sing this song with your mouth full of cookie!
hehe...I tried...it works, just watch out for the chocolate chips!

Now, since first making these a-ma-zing cookies, I have made several batches. 
They are really just that delicious. 
I think about them when I run out, wishing that there was just one more cookie. 
The thing about these cookies, is that I really don't feel guilty
eating them like I do (sometimes) when I eat another cookies. 
Somehow, these cookies seem less threatening then others.
I like that.
